Simple Rice Bread

Have you ever stepped into your kitchen all set to do some baking, only to realize you don't have all the necessary ingredients? That's what happened to me today. I've been sick and unable to get out, so running to the store wasn't an option. Yet I still needed some bread. I looked through my bread recipes, but didn't find a bread recipe that would work well with substituted ingredients. So, I decided to create a new bread recipe.

My experiment resulted in a firm dense bread, which is easily cut into slices. The flavor's plain, but it would be easy to add seeds, fruits, or other ingredients to add more flavor. While this isn't my favorite bread recipe, it does work with simple ingredients. You can still have bread, even if you're out of milk and yeast.

Here's my recipe if you'd like to give it a try. Please feel free to "play around" with it!

Simple Rice Bread*

2 1/2 cups Rice Flour
1/2 teaspoon Sea Salt (more or less according to your preference)
1/2 teaspoon Baking Soda
1/4 teaspoon Xanthan Gum
3 Eggs
3 tablespoons Honey (more or less according to your preference)
1/2 teaspoon Apple Cider Vinegar (or White Vinegar)
3/4 cup Water
2 tablespoons Butter (melted)


1). Preheat oven to 350 F (180 C) and grease a 7.5" x 3.5" loaf pan.

2). In a large mixing bowl, combine rice flour, salt, and baking soda, then whisk until thoroughly combined.

3). Add water, and mix thoroughly. (If the bread batter seems too dry, add 1 tablespoon of additional water at a time, until the batter is moist, but not runny). 

4). Pour dry ingredients in with the liquid ingredients, stir well until combined.

5). Bake for 40-45 minutes, until crust is a golden brown, and/or a knife (inserted in the middle of the loaf) comes out clean.

6). Cool and serve.

Makes 1 loaf (about 12 slices)

*Note:  Please be aware this bread doesn't rise very much and is dense.
